salmon with the bones and skin? Well, I like to buy the large fillets of
salmon at Sam's Club and now that we are empty nesters, there is
miraculously a lot of cooked salmon left over. So, no picking through
the icky cans of fish. I guess you could call these New Millennium
Patties!
3 beaten eggs, 1/4 cup chopped chives, 1/2 tsp white pepper
into about 3 lbs of cooked flaked salmon. Form into patties and
brown in 2 tbsp EVOO (that's extra virgin olive oil) and serve
with sour cream and dill or homemade white sauce. Adjust
ingredients to amount of salmon on hand.

I love to make salmon patties, use bread crumbs instead of crackers. Delicious.

That's very similar to my mother's recipe. I love salmon patties. I confess to also liking the bones. My mother left them in... good calcium and all. She told us that whomever got the first one would have good luck. :)
ReplyDeleteI think because I have those of the slimy cans of salmon with their little bones that I am indifferent to salmon of any kind. I know, you're saying, "She doesn't like poached eggs and now salmon..what a peasant!" LOL...Childhood memories can really ruin one's perspective!

Willow...I have not had salmon patties in so long! My mother did used to make them when I was younger...with german fried potatos...ummmmmmmmmmmmmmmmm.. :)
ReplyDeleteI made some salmon patties on a whim a few months ago. Surprise of surprises, all of the men at my house liked them! I served them with an easy to make dill hollandaise sauce that complimented them perfectly.

ReplyDeleteI grew up on fish patties, crab cakes, shrimp, and oranges because I've always lived in coastal SE America. We use bread crumbs instead of crackers though. I'll have to try that sometime. These 'cakes are easy and very tasty! ♥ ∞

ReplyDeleteMy mom made (and still makes) salmon patties at least once a month. She makes them with the canned salmon, bones and all. I ate them, but I can't say I loved them. Kinda dry and salty. Yours look delish!
