Lala's Gazpacho

I know...I posted something already today, but I just made this
delicious gazpacho for lunch. It's the perfect summertime meal,
cool and refreshing! Lala posted this last week and it looked so
wonderful, I had to give it a whirl. I was right...it is!! Quick and
easy, too. Thank you Lala, for this scrumptious recipe!

Lala's Gazpacho
450 g (or 6-8) ripe plum tomatoes
1 green pepper, seeded and roughly chopped
1 red pepper, seeded and roughly chopped
1/2 cucumber, roughly chopped
1 onion roughly chopped
red wine vinegar (15 ml / 1 tbsp)
olive oil (15 ml / 1 tbsp)
salt, black pepper
ice cubes (3-4)

Mix and process all the ingredients in a food processor until
you get a homogeneous mixture. Pour the gazpacho into a bowl.
Add the ice cubes to chill the soup quicker and place in the fridge
to cool. When you serve it, you can sprinkle finely chopped green
pepper and cucumber to decorate. Once made you can keep the
gazpacho for a couple of days in the fridge.

  3. We also enjoy gazpacho this time of year. The only difference from your recipe is we don't use ice - just refrig chilled - and I like thin slices of radish along with cucumber and bell pepper as the adds.

  7. Reading your gazpacho recipe reminded me that it is time to make tomato soup aux parfums de provence. There is a wonderful little cookbook called Pedaling Through Provence and the soup mentioned above is incredible, if you like tomato soup. It should be served hot but the soup, along with the goat cheese and pistou topping add such a finish. I would be happy to email the recipe if you would like.

  14. Oh, dear, I haven't popped by for a few days (going to job interviews and all that jazz, and, yes, I got a job, finally!) and look what greets me on the threshold of your blog, dear Willow! One of my favourite soul foods ever! because this type of soup doesn't just reach your stomach, oh, no! It meanders through your system, creating all kind of havoc and funny reactions, pretty much Gremlin-style; all to good effect, mind. I have singled it out as a future item in my 'Music, Food, Music, Food, Music, Food, Ad Naseaum...' section and maybe I will upload before going into hibernation (camping) at the end of July and of course, I will link the image to your blog.

    Wow! It's just gone one here in Blighty and I'm making soup, another type of soup and... I am hungry, mightily hungry.

  15. Willow, a good bowl of soup. hot or cold, is always a treat.

    I'm a big T.J. Maxx & Marshalls shopper. I'm not about paying retail. Yesterday I picked up two-dozen Nike golf balls at a Marshalls for less than $20 - a steal!

I find so many things I agree with on your blog, about cooking, books, movies, yes, Chocolat even if I don't like Johnny Depp sometimes, but Juliette Binoche made that great movie what it was.   21. Have tried so many times vichyssoise/qazpacho, just can't enjoy cold soup. I think this is part of my childhood, piping hot stews and all that!!
