two of my favorite things

I love fresh corn and tomatoes, so I didn't have to think twice about
this wonderful summer dish. It's another one of those quick and
easy recipes from Gourmet magazine's July issue. Simple and
delicious.

Corn-and-Tomato Scramble

2 Tbsp olive oil
1 Tbsp vinegar (I used rice vinegar)
1 pound tomatoes cut into bite size pieces
1 bunch scallions, finely chopped, keeping greens separate
2 Tbsp butter
4 cups corn kernels (from about 8 ears)

Whisk together oil, vinegar. Toss tomatoes to marinate.
Cook white parts of scallions in butter until golden, add corn
and 3/4 tsp salt and 1/2 tsp pepper and cook until tender, about
five minutes. Transfer to bowl and cool. Toss together, tomatoes,
corn and scallion greens. Serve room temperature.

  10. Willow, So happy there's not an egg component - "scramble" always leads me "egg." Great summer recipe, thanks!

  15. Looks yummy. My sister makes a corn slaw that is a little different but is very good too. It is 110 degrees today here in sunny CA. To bad I didn't see this earlier but I'm sure there's still plenty of even hotter days coming. Looks refreshing.

  16. I love the word scramble used in cooking. Especially in summer, it suggests mess, of the organised variety. I love your recipe because like you I am fond of both corn and tomatoes, especially when the latter are really ripe and red.

    Many thanks.

    Greetings from London.

  20. Nothing beats the Jet Star tomatoes from my garden, which won't be ripe until later in July, but when they are, they are so a part of this recipe!

It's so hot here; I can't eat anything but salads (and ice cream, unfortunately).

  43. This looks great - tasty and easy! it is good to be back visiting after my trip away. Have you seen The reader? I first read the book; now the movie on the airplane back from Europe. Thought Kate was amazing. She even moved with the heaviness of someone accustomed to hard work.
