two of my favorite things
I love fresh corn and tomatoes, so I didn't have to think twice about
this wonderful summer dish. It's another one of those quick and
easy recipes from Gourmet magazine's July issue. Simple and
delicious.
Corn-and-Tomato Scramble
2 Tbsp olive oil
1 Tbsp vinegar (I used rice vinegar)
1 pound tomatoes cut into bite size pieces
1 bunch scallions, finely chopped, keeping greens separate
2 Tbsp butter
4 cups corn kernels (from about 8 ears)
Whisk together oil, vinegar. Toss tomatoes to marinate.
Cook white parts of scallions in butter until golden, add corn
and 3/4 tsp salt and 1/2 tsp pepper and cook until tender, about
five minutes. Transfer to bowl and cool. Toss together, tomatoes,
corn and scallion greens. Serve room temperature.

ReplyDeleteLooks yummy. My sister makes a corn slaw that is a little different but is very good too. It is 110 degrees today here in sunny CA. To bad I didn't see this earlier but I'm sure there's still plenty of even hotter days coming. Looks refreshing.
ReplyDeleteI love the word scramble used in cooking. Especially in summer, it suggests mess, of the organised variety. I love your recipe because like you I am fond of both corn and tomatoes, especially when the latter are really ripe and red.

What a gorgeous photograph! The recipe sounds wonderful. It won't be that long before the ingredients will be locally available in NE Ohio. Some even from my garden.
ReplyDeleteNothing beats the Jet Star tomatoes from my garden, which won't be ripe until later in July, but when they are, they are so a part of this recipe!

I'm going to guess that scallions are the UK's spring onions and I'm not going to guess - I'm going to guarantee that I'll be doing this recipe - I love corn and tomatoes.

I'm so glad to have something new to add to my BBQ side dish repertoire! There is nothing more delicious and summery than fresh corn. Lovely yummy colors, too.

BTW, I've got some lovely sweet peas running wild (as per the description of poetry). . . I was just taking some pics this morning.
