more snickety lemon stuff

I've been on a lemon kick this week. After I posted the lemon polenta cake recipe, many readers mentioned having lemon trees, and were looking for new and different ways to use lemons. Well, here is a delicious savory lemon recipe, that's super quick and easy to make.  I don't know about you, but I am always grabbing a rotisserie chicken. Instead of stir-fry or chicken pie, try this for a change.  It's made with egg yolks, so it's not a dish you would want to eat every day, but it is a refreshing treat.  It would also be a great starter for a seafood entree.

Greek Lemon Soup with Chicken

In a large saucepan, bring 6 cups chicken broth to a boil.  Add 1/3 cup orzo and boil until tender, about 8 minutes.  In a bowl, beat 6 egg yolks; slowly whisk in 1 cup of the hot broth. Add the egg mixture to the saucepan and cook over medium heat, stirring until thickened, a minute or two.  Add 1 1/2 cups shredded rotisserie chicken and the juice of one lemon (about 2 tablespoons). Season with freshly grated pepper.  Serves 4.

  1. I tend to use Lemon juice in place of salt, so it goes in almost everything. This soup looks so good!

  3. A delicious rich version of a soup sometimes called avgolemono. I haven't made this for ages but just happen to have the ingredients to hand. Perfect for a cold day that needs an injection of Spring hopefulness.

  7. I've shoved a lemon inside the bird before cooking, I also make lemon meringue pie from scratch, it's like summer in your mouth, but never have tried it in soup. Looks yummy.

  11. i was trying to decide what to make for dinner tonight! thanks for supplying the perfect idea!! with a rotisserie chicken from the store it will be as easy as one, two, three - best think is i have all the other ingredients!

    had fish and chips on monday! but should you find yourself in nyc checking out edna's house - head to "a salt and battery", very nearby (a hop, skip and jump) along with a very clever name, it the best fish and chips on this side of the pond!

  17. I have tried to make your polenta cake 3 times! First I was sure I had lemons but didn't. Next day went and got lemons, start to begin and I'm out of polenta. A few days later with polenta in hand I WAS OUT OF EGGS. I don't know what is wrong with me. I have a plan to make it tomorrow to take to a friends so hopefully I'll be a grown up and check the pantry in time :)

  25. Lemony things are just what we need at the moment. Yellow is my favorite color in March, and my house is filled with bouquets of daffodils, forsythia and pussy willow.

    The soup sounds lovely. Just yesterday, I was hosting a 50th birthday lunch and I made a quiche with a lemon pastry crust and a chicken/mozzarella filling. Great minds, huh?

    I adore the clever Lemony Snicket and these are particularly good lines of his.
