a little secret


Pssst. Hey, I'll let you in on a little secret. This is the best salmon ever. It's the perfect subtle mix of flavors. I swear, it tastes like something you would eat in a fine restaurant, and it's super simple to make. Here's all you do:

Mix equal amounts of chili powder and brown sugar in a dish. Dredge raw salmon fillets in the mixture. In a bit of oil in a hot skillet on the stove top, caramelize each side about one minute. Remove to a baking sheet and pop in a 400 degree oven for about 15 minutes, or until cooked through. That's it. Easy peasy.

  14. I have enjoyed every recipe that I've found here at the Manor. Just today I was joking with my daughter -- whose food prohibitions I'm constantly having to work around. I told her that when she goes off to boarding school in September we are going to be eating salmon every other night! Cooked like this . . .

    i think i might be worried about doubling it if it was for compnay..i never have...to be safe i would go with 2 seperate ones...

    i would worry about it not getting done on the inside and too dark on the outside :-{

  23. Tom, if you start to choke on a fish bone, you can either put a piece of bread on your head or pull on your big toe. That should fix things.

  44. I'll pick some up at Costco tomorrow. I made halibut today - the last of the fillets my son got on his deep sea fishing trip in the bay a few months ago. I sauteed them with onions,green olives,tomatoes, capers and shrimp and served them with rice and a salad and they were wonderful.

  48. Dear Willow: I don't use salt either and if I do it has to be celtic sea salt or the like. This would keep the flavour in. Have you ever tried cedar planks for cooking salmon on the BBQ? I had a heck of a time til I figured out that the cedar planks have to be soaked in water plus a good hose just in case. With fish I like it simple. The flavours are so rich on their own. Not into smoked fish too much, but I do like some lightly smoked cheese. Everything in Canada (traditionally) is smoked. Jane Jones (oops I forgot to sign in coming straight from FB)

  51. This looks amazing. I take salmon steaks, brush them with olive oil and soy sauce, wrap them in aluminum foil, and bake them on the barbecue. Their juices and precious little fat content are locked in. Thanks for this recipe.

  55. Here's an equally simple recipe that tastes great. Equal amounts of grainy dijon mustard and maple syrup. Pour over salmon and if you like press crushed pistashios on top or black sesame seeds. Grill or pan fry. Enjoy!

  57. Perfect timing Willow. MOTH had picked up a very large whole Ocean Trout at the Fish Market yesterday morning. He filleted it out & last night I gave this recipe a spin using 2 of the big plump fresh fillets. It was exactly as you promised & more - totally delectable. Thanks go to Susan-a definite 10/10.
