last two weeks. It's fresh, light and perfect for a hot summer
evening. I served it with hot grilled pita bread and an ice cold glass of
Chardonnay. You can thank Susan, over at 29 Blackstreet for sharing
this fabulous recipe! Yummity-yum-yum-yum.
Grilled Chicken Greek Salad

1 cup of plain yogurt
zest and juice of 1 large lemon
2 tbsps. crushed dried oregano

and stirring occasionally, 30 mins. to several hours. Grill chicken and
oiled thick slices of 2 large Vidalia onions and when cool slice both in
chunks.

grilled chicken
grilled onions
Kalamata olives
crumbled feta cheese
chunks of tomato
chunks of cucumber
drizzle of vinaigrette
I'm not a salad person, but this salad looks GOOD!! I'm going to save this recipe to try a bit later. Thanks! Have a good weekend Willow! : )
ReplyDeleteI would be tempted to toss in bits of grilled zucchine and eggplant (instead of cucumber, which my husband does not like). Sounds great.
ReplyDeleteSpaced, those sound like excellent substitutions! I know you and your husband will like it.
ReplyDeleteThat does look good. I think I'll have to try it. (And what are you doing up do late little girl?)
ReplyDeleteMight just put that to one side, until the weather warms up this side of the equator, and then give it a go.

ReplyDeleteHello Willow,
ReplyDeleteThis certainly does look yummy! I love feta, it works well in so many salads. Spacedlaw's suggestion is great; there are plenty of chargrilled veggies that could be added.

ReplyDeleteThis even looks good at breakfast-time! (Feta is my favorite.)
ReplyDeleteI'm so glad you're enjoying this recipe - although I'm not at all surprised - it definitely seemed very much a Willow dish. Have you checked out my roasted beet and orange salad from yesterday's post - super easy and another recipe with mint - which I too, have a ton of.
