New Coq Au Vin

With all the hubbub of the Manor Ball, I was ready for some fast and
easy comfort food. Hmm...what did I have on hand? Some frozen
chicken thighs, celery and a bottle of white wine. That's all you need
for this perfect, quick and easy little weekend supper! The super
moist chicken is infused with earthiness of the celery, wine and garlic.

New Coq Au Vin
Braised Chicken with Celery and Garlic

6 chicken thighs with skins and bone, 2 lb
2 Tbsp olive oil
10 garlic cloves, halved
3 celery ribs cut into 1 inch pieces
1 cup dry white wine
1 cup water
1/4 cup finely chopped flat leaf parsley (optional)

Pat chicken dry and season with 1 tsp salt and 1/2 tsp pepper.
Heat oil in a 12 inch heavy skillet over medium high heat
until it shimmers. Sear chicken, skin side down until golden
brown (do not turn) 3 to 5 minutes, then transfer to plate.

Pour off all but 2 Tbsp fat from skillet. Cook garlic and celery
in skillet over medium heat until golden and just beginning to
soften. Add wine and boil, uncovered, until reduced by half.
Add water and bring to a simmer.

Return chicken, skin side up, to skillet and simmer, partially
covered until cooked through, about 25 to 30 minutes.
Sprinkle with parsley and serve with olive oil mashed potatoes.

  13. Looks delicious. Always remember to add the following to any receipe calling for wine. Justin Wilson used to say not to use any wine you wouldn't drink. Then he added; Before you start the receipe pour yourself a glass of wine. And, inbetween each receipe step add, "have a little sip of wine." I think you will find it makes your cooking experience much more pleasurable. Pappy

  14. On seeing this picture I was going to have a tantrum and start throwing my toys out of the pram and demand that I be fed this delicious recipe. But on second thoughts, though, I just remembered that last night I was with my young family out in London and stopped by Ed's Diner in Soho and had a lovely meal there (yes, fast food, but real beef, not McDonald's plastic burgers!). So, no, after devouring a Big Bubba All Day Breakfast, I don't feel jealous. Will nick your recipe, though :-). Thanks for the post and thanks, once again, for the cyber-ball.

  16. Yum--once again, here on the road, I'm dyin' now! I wish I could just have a kitchen and fix that right now! LOL. Sounds like such comfort food. It's chilly here in Portland and I could go for that. I love your photos, too--they're always so tempting, Willow! I won't need a cookbook any more--I'll just head to your website and pick my meals here from now on.

  18. Willow, This is a great recipe...I'll try it sometime soon. Because we are just two, we regularly dine on a family favorite "Mustgo" (everything in the fridge must go!). Last night was lasagne, roast chicken and half bag of baby spinch salad!
