chicken in every pot, literally
With all the crazy holiday prep, the last thing I feel like doing is making supper. So, this week, instead of picking up the phone to order pizza, I got a little creative with the bundt pan. You all have one, and it's already handy, since you just dug it out from the back of the cabinet for its yearly one time use.
Layer a few potatoes, carrots and onions on the bottom of the pan. Then season the chicken and place in the pan with the open cavity over the center hole. (It's okay, the chicken doesn't feel a thing.) Roast as usual, with a cookie sheet underneath to collect any small dripping that may occur. The chicken crisps all the way around, and the veggies cook in the juices. Easy holiday peasy.

I go the extra mile
to make chicken pie for supper.
While the incumbent hen stews,
steaming savory flesh and bones,
with enough thyme and peppercorns,
I ceremoniously sauté two primary
livers, consider simplicity,
how I like things explained
in words of one syllable,
then pour a fresh glass of Chianti,
dip each bite, wide, in a puddle
of democratic ketchup, raise
the wine high, toasting the fowl
and my economy.

And, in keeping with the situation, here's my favorite eggnog recipe. Serve it with a dollop of whipped cream. Oh, man-oh-man, is it ever wonderful.
1 heavy cream
½ Drambuie or Southern Comfort
handful of ice cubes
sugar or Splenda to taste
freshly grated nutmeg to taste
Blend the dickens out of it. Cheers!

Even though I'm a vegetarian, I like the flavor of veggies roasted with the chicken. Daughter eats meat so I can do this without waste. I've never tasted eggnog. It seems like it would be gross to have raw egg, even though I will eat cookie dough, yes, strange.ReplyDelete

Seriously though, that pan looks like the spinning piece to an ultrafuge. The kind that spin upwards of 13k via pressurized air.

We'll have to give your eggnogg a go this year--sounds great, Willow. I have a bundt pan exactly like that one, so I'm going to try that. I have a terra cotta bundt pan that I have roasted a chicken on before, but I've never tried this--that sounds delicious--my kind of meal. Yum!ReplyDelete

clever idea. i have decided to go vegetarian except for occasional chicken dinners and just bought a chicken for Xmas dinner since i will have one guest and nothing vegetarian seemed festive enough unless I did a lot of work as in :moussaka or lasagna.ReplyDelete

It's funny about me and egg nog...I used to adore the stuff, really loved it. Then about ten years ago, I utterly lost my taste for it and now I hate it. Weird, huh?

I resist cooking for only me most of the time, but then the day comes when I have to have good food. At that point, I break down and cook for myself. Last Saturday was just such a day. I made delish curry chicken. But, it's gone now. I think I'll use all the random produce in the fridge and make some stir fry today. That should last me to Christmas.
