easy as pie


Is it cheating to use ready made pie crust? Shh!! Don't tell. Of course
it's not. You can throw together a scrumptious homemade pie in
minutes and no one will know you didn't spend all day in the kitchen.
Heavens to murgatroyd it's good! And so easy peasy.

Mixed Berry Glazed Pie

1 box of Pillsbury ready made roll out pie crusts
3 16 oz. bags frozen mixed berries
1 cup sugar
1 cup flour
2 Tbsp butter
1/2 cup powdered sugar
1 Tbsp cream or orange juice

Line a 10 inch pie plate with the bottom crust. Mix sugar and flour
together and pour over berries. Add to pie crust. Dot with butter.
Add top crust and crimp edges. Bake one hour at 350 until bubbly
in center.

Mix powdered sugar and cream or juice and glaze hot pie.

(I cover the edges, before baking, with aluminum foil.)

  3. Yum! I use ready made sometimes too, especially for quiches. I made one in the food processor for a ricotta bacon tart yesterday which was so easy it felt like cheating.

    Incidentally, if you haven't checked out eggsonsunday.wordpress you really ought to..I think it would be right up your alley...nothing in it for me, just an amazingly good cooking blog!

  4. Send a slice this way and I will give you my opinion on pre-made vs homemade crusts .. did you know that if you make homemade crust you should brush the edges with milk, it slows down the baking so the pie itself gets done w/o burning the edges .. just sayin'

  9. I've never understood that phrase, "Easy as pie." Even with a ready-made crust and canned filling, I've never yet baked a successful pie. Cakes? No problem. And I'm the king of the Bobboli pizza. But pies defy me, and I see nothing at all "easy" about baking one. Must be a genetic malfunction or something.

    Now eating pie...

  10. Pies are one of the few baked treats I make. That recipe sounds great, like the glaze idea. Although I do prefer a homemade crust, store bought is great when you want it fast.

  13. Oh, Willow. Here I am riding in the car all the way to Baltimore (a 3 hour drive), and I have had no breakfast. I was just wondering if we should stop at Starbucks for a quick sweet or keep going and have an early lunch.

    Guess you know what we are going to do?

    I am going to get something with berries in it.

  22. yum. i'm coming right over for a piece. i use frozen Oranoke orchards (Stratford Conn.) pie crusts. i grew up not far from the original Oranoke Orchards farm stand where we bought all sorts of delicious fruits and pies so i have an affection for their piecrust. maybe you cant get them in the mid-west, i dont know.

  32. Can you really and truly buy ready made pie crusts ???? We have packs of short pastry and bags of good old fashioned flour and packets of fat --But ready made- how wonderful !!

  33. Cheating is only cheating when you take credit for other's work ie: buying a ready made whole pie and saying you slaved and slaved for days to make it. THEN that would be cheating. Having a little help, however..... ;-)

  40. To make good pastry is a real trick. My mother makes great pastry, but I fear I will never master it, so I welcome the recipes that give me an easy way out. This looks magnificent and I shall be purchasing the magic dough from the Pillsbury Puff-boy himself with great haste.

    I think readymade pastry is wonderful eventhough I don't use it very often. The ready baked pastry cases are even better! Pity I can't grab a piece with my morning coffee!!

    But seriously Willow, I taught my Mom how to do the perfect pie crust from scratch. Of course now, she uses the the easy version. And no frozen crusts! UGH!

  55. This looks fantastic, Willow. I used to cover my edges with tin foil but several years ago I bought an inexpensive little cover that goes around the edge of the pie plate. Got it from Pampered Chef, I think.
